Recipe:
makes 12 smol scones
- 280g all purpose flour
- 80g organic cane sugar
- ½ tsp salt
- ½ tsp baking soda
- 2 tsp baking powder
- 110g cold hard coconut oil (take out of fridge like 10-15 before)
- ½ + 2 tbsp soy milk
- ½ tbsp of vanilla bean paste (or you can use a bean pod)
First sift flour, sugar, salt, baking soda and powder together in a bowl. Add pieces of coconut oil into bowl. Using your fingers or pastry cutter, incorporate the oil into the flour mixture. Watch a video on “pie crust crumbling techniques” you just gotta mush the cold coconut oil and the flour together until it resembles crumbly wet sand. Combine soymilk and vanilla paste together. Scrape every last drop of milk into dough and mix with spatula. When it comes together, knead lightly with hands. Split the dough in two, and shape into a round disk. Use a bit of ap flour. Transfer each piece onto pan lined with parchment paper. Cool, then sprinkle sugar or add powdered sugar + vanilla bean glaze like I did. eNjoY!!!!!!!!
