



Lemon poppyseed cake
im gonna show you how ridiculously easy it is to make things vegan *hint* (boxed cake)
Recipe:
- 1 box of white cake mix
- ½ cup of oil
- 3 egg replacers or applesauce
- juice of half a lemon
- zest of half a lemon
- ½ cup of soy milk
- ½ cup of water (i needed a few splashes more to loosen batter)
- 1 ½ tbsp of poppyseed
- butter to grease pan or parchment paper
- icing sugar + lemon juice for glaze
people think being vegan is too hard/too complicated. For this recipe, i literally just followed the instructions on the box, which asked for 3 eggs, ½ cup oil, and 1 cup of liquid. how hard is that?? just add some lemon and poppyseed or anything else you like to spice things up
dump all the ingredients into a pan, mix well, and pour into cake or loaf tin. Bake at 350F for 35-40 minutes. Cool then ice or eat as is. SIMPLE. enJOYEEE
